Ht. 5'4", Start: 173 lb, Today: 173 lb (BMI %tile: 96), Goal: 130 lb - So...I was thinking about cutting carbs completely out of my diet...which lets be serious, is totally unrealistic for me....So I was hoping somebody would have a piece of advice for me to start eating less carbs...!

Carbs are very important to your diet but not most important--protein comes first. I would suggest eating low-carb pasta (Dreamfields and Healthy Harvest taste awesome, literally, and they are low-carb...seriously, they taste completely normal), low-carb chicken (no fried, only rarely breaded, etc.), low-carb meat (lean or organic, though more expensive, are much better for you).
